Ingredients

  • Salmon fillets - 250 grams
  • Soy sauce - 2 tablespoons
  • Honey or sugar substitute - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Black pepper - 1/4 teaspoon
  • Sesame oil - 1 teaspoon
  • Lettuce leaves (for wrapping) - 4 large
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon

Steps

  1. In a small bowl, whisk together soy sauce, honey (or sugar substitute), rice vinegar, minced garlic, grated ginger, black pepper, and sesame oil to make the teriyaki sauce.
  2. Preheat a non-stick skillet over medium heat.
  3. Place the salmon fillets in the skillet, skin-side down, and pour half of the teriyaki sauce over the fillets.
  4. Cook the salmon for 4-5 minutes, then carefully flip and pour the remaining teriyaki sauce over the top. Cook for another 4-5 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon is cooking, prepare the lettuce leaves as burger wraps and slice green onions for garnish.
  6. Once the salmon is done, remove it from the skillet and let it rest for a minute. Flake the salmon into large pieces.
  7. To assemble, place a generous amount of flaked salmon in each lettuce wrap, sprinkle with sliced green onions and sesame seeds, then fold the lettuce around the filling.
