Ingredients

  • Salmon fillets - 2 (about 150g each)
  • Soy sauce - 4 tablespoons
  • Honey - 2 tablespoons
  • Mirin - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Cooked white rice - 1 cup
  • Broccoli florets - 1 cup
  • Carrot - 1 medium, julienned
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a small bowl, whisk together soy sauce, honey, mirin, minced garlic, grated ginger, and sesame oil to create the teriyaki sauce.
  2. Heat a non-stick skillet over medium heat and add the salmon fillets, skin side down. Season with salt and pepper.
  3. Cook the salmon for about 4-5 minutes on each side, or until cooked through and flaky. Brush the teriyaki sauce over the salmon during the last minute of cooking.

  5. Prepare the rice according to package instructions if not already cooked.
  6. To assemble the bowls, place a serving of rice at the bottom, top with the teriyaki salmon, steamed broccoli, and julienned carrots.
  7. Garnish with chopped green onions and sesame seeds before serving.
