Ingredients

  • Chicken thighs - 400 grams
  • Soy sauce - 60 ml (low sodium)
  • Rice vinegar - 30 ml
  • Sesame oil - 15 ml
  • Grated ginger - 1 teaspoon
  • Minced garlic - 2 cloves
  • Erythritol or similar sugar substitute - 1 tablespoon
  • Green onions - 2 stalks, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a medium bowl, combine soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and erythritol to create the teriyaki marinade.
  2. Add the chicken thighs to the marinade and ensure they are well coated. Let them marinate for at least 15 minutes (or up to 2 hours in the fridge for deeper flavor).
  3. Preheat a skillet over medium-high heat. Once hot, add the marinated chicken thighs, cooking for about 6-7 minutes on each side, or until they are cooked through and have a nice glaze.
  4. Remove the chicken from the skillet and let it rest for a few minutes. Meanwhile, reduce the remaining marinade in the skillet for 2 minutes to thicken it slightly.
  5. Slice the chicken thighs and drizzle with the reduced marinade. Garnish with chopped green onions and sesame seeds before serving.
