Ingredients
- Chicken thighs - 400 grams
- Soy sauce - 60 ml (low sodium)
- Rice vinegar - 30 ml
- Sesame oil - 15 ml
- Grated ginger - 1 teaspoon
- Minced garlic - 2 cloves
- Erythritol or similar sugar substitute - 1 tablespoon
- Green onions - 2 stalks, chopped (for garnish)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- In a medium bowl, combine soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and erythritol to create the teriyaki marinade.
- Add the chicken thighs to the marinade and ensure they are well coated. Let them marinate for at least 15 minutes (or up to 2 hours in the fridge for deeper flavor).
- Preheat a skillet over medium-high heat. Once hot, add the marinated chicken thighs, cooking for about 6-7 minutes on each side, or until they are cooked through and have a nice glaze.
- Remove the chicken from the skillet and let it rest for a few minutes. Meanwhile, reduce the remaining marinade in the skillet for 2 minutes to thicken it slightly.
- Slice the chicken thighs and drizzle with the reduced marinade. Garnish with chopped green onions and sesame seeds before serving.
