- Bell pepper - 1 small, diced
- Carrot - 1 small, diced
- Green peas - 1/2 cup

Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the diced bell pepper and carrot, cooking for about 3-4 minutes until they begin to soften.
- Add the tandoori masala and sauté for an additional minute, allowing the spices to release their aroma.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
- Pour in the 2 cups of water, add salt to taste, and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 15-18 minutes or until the rice is cooked and the water is absorbed.
- Remove the pot from heat and let it sit covered for another 5 minutes.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve with lemon wedges.
