Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Tandoori masala - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Bell pepper - 1 small, diced
  • Carrot - 1 small, diced
  • Green peas - 1/2 cup
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Stir in the diced bell pepper and carrot, cooking for about 3-4 minutes until they begin to soften.
  5. Add the tandoori masala and sauté for an additional minute, allowing the spices to release their aroma.
  6. Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
  7. Pour in the 2 cups of water, add salt to taste, and bring the mixture to a boil.
  8. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 15-18 minutes or until the rice is cooked and the water is absorbed.
  9. Remove the pot from heat and let it sit covered for another 5 minutes.
  10. Fluff the rice with a fork, garnish with fresh cilantro, and serve with lemon wedges.
