- Red bell pepper - 1/2, diced
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn husks - 10, soaked in warm water
Steps
- Rinse the rice under cold water until the water runs clear, then cook it in a pot with 2 cups of vegetable broth according to package instructions.
- In a skillet, heat olive oil over medium heat, then add garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper and green onion to the skillet, cooking for another 3-4 minutes until softened.
- Stir in the cooked rice, cumin, salt, and black pepper, mixing everything thoroughly. Remove from heat and let cool.
- In a bowl, combine the corn masa harina with the remaining 1 cup of vegetable broth, kneading until a smooth dough forms.
- Take a soaked corn husk, and spread about 2 tablespoons of masa dough onto the center, then add 2 tablespoons of the rice filling on top.
- Fold the sides of the husk over the filling, then fold the bottom up to create a tamale. Repeat with remaining husks and filling.
- Place the tamales upright in a steamer basket and steam for 45-60 minutes until the masa is firm and cooked through.
- Remove from steam and let rest for 10 minutes before serving.
