- Brown rice - 1 cup
- Vegetable broth - 2 cups
- Black beans - 1 can (400g), drained and rinsed
- Corn - 1 cup (fresh or frozen)
- Red bell pepper - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 tsp
- Chili powder - 1 tsp
- Lime juice - 2 tbsp
- Fresh cilantro - 2 tbsp, chopped
- Olive oil - 1 tbsp
- Salt - to taste
- Pepper - to taste
Steps
- In a medium saucepan, heat olive oil over medium heat and sauté the diced onion and garlic until translucent, about 3-4 minutes.
- Add the diced red bell pepper and cook for an additional 2-3 minutes until softened.
- Stir in the cumin and chili powder, cooking for another minute to release the spices' aroma.
- Add the brown rice to the saucepan, stirring well to coat the rice with the mixture.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes or until rice is tender and liquid is absorbed.
- Once the rice is cooked, add the black beans, corn, lime juice, salt, and pepper. Stir gently to combine and heat through.
- Remove from heat and stir in chopped cilantro before serving.
