- Diced tomatoes - 400 grams (canned, no added sugar)
- Beef broth - 500 ml
- Taco seasoning - 2 tablespoons (low-carb if possible)
- Black olives - 50 grams, sliced
- Cheddar cheese - 50 grams, shredded
- Sour cream - 2 tablespoons (for topping)
- Cilantro - a handful, chopped (for garnish)
- Salt - to taste

Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and bell pepper, and sauté until they are soft, about 5 minutes.
