  • Bell pepper - 1 medium, diced
  • Diced tomatoes - 400 grams (canned, no added sugar)
  • Beef broth - 500 ml
  • Taco seasoning - 2 tablespoons (low-carb if possible)
  • Black olives - 50 grams, sliced
  • Cheddar cheese - 50 grams, shredded
  • Sour cream - 2 tablespoons (for topping)
  • Cilantro - a handful, chopped (for garnish)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and bell pepper, and sauté until they are soft, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the ground beef to the pot, breaking it apart with a spoon, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  5. Mix in the diced tomatoes, beef broth, and taco seasoning. Stir well to combine.
  6. Bring the mixture to a simmer and let it cook for about 15 minutes, stirring occasionally.
  7. Season the soup with salt and pepper to taste.
