Ingredients
- Ground beef (lean) - 200 grams
- Black beans (canned, drained) - 120 grams
- Corn tortillas - 4 pieces
- Cheddar cheese (shredded) - 100 grams
- Tomato sauce - 120 ml
- Taco seasoning - 1 tablespoon
- Onion (small, diced) - 1 piece
- Garlic (minced) - 2 cloves
- Olive oil - 1 tablespoon
- Green bell pepper (diced) - 1/2 piece
- Corn (canned, drained) - 100 grams
- Sour cream (for serving) - 50 grams
- Fresh cilantro (chopped, for garnish) - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet over medium heat, add olive oil. Sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the taco seasoning, black beans, diced green bell pepper, corn, and tomato sauce. Cook for another 5 minutes until heated through.
- In a baking dish, layer half of the corn tortillas at the bottom. Spoon half of the beef mixture over the tortillas and sprinkle with half of the shredded cheddar cheese.
- Repeat the layering with the remaining corn tortillas, beef mixture, and top with the remaining cheddar cheese.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Serve with sour cream and garnish with chopped cilantro.
