Ingredients

  • Ground beef (lean) - 200 grams
  • Black beans (canned, drained) - 120 grams
  • Corn tortillas - 4 pieces
  • Cheddar cheese (shredded) - 100 grams
  • Tomato sauce - 120 ml
  • Taco seasoning - 1 tablespoon
  • Onion (small, diced) - 1 piece
  • Garlic (minced) - 2 cloves
  • Olive oil - 1 tablespoon
  • Green bell pepper (diced) - 1/2 piece
  • Corn (canned, drained) - 100 grams
  • Sour cream (for serving) - 50 grams
  • Fresh cilantro (chopped, for garnish) - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet over medium heat, add olive oil. Sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  4. Stir in the taco seasoning, black beans, diced green bell pepper, corn, and tomato sauce. Cook for another 5 minutes until heated through.
  5. In a baking dish, layer half of the corn tortillas at the bottom. Spoon half of the beef mixture over the tortillas and sprinkle with half of the shredded cheddar cheese.
  6. Repeat the layering with the remaining corn tortillas, beef mixture, and top with the remaining cheddar cheese.
  7. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes or until the cheese is bubbly and golden.
  8. Remove from the oven and let cool for a few minutes. Serve with sour cream and garnish with chopped cilantro.
