Ingredients
- Bulgur wheat - 1/2 cup
- Water - 1 cup
- Fresh parsley - 1 cup, finely chopped
- Fresh mint - 1/4 cup, finely chopped
- Tomatoes - 1 medium, diced
- Cucumber - 1/2 medium, diced
- Green onion - 2, finely sliced
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a small pot, bring 1 cup of water to a boil. Add the bulgur wheat, cover, and remove from heat. Let it sit for 15-20 minutes until the water is absorbed and the bulgur is tender.
- While the bulgur is cooking, prepare the vegetables. Finely chop the parsley and mint, and dice the tomatoes and cucumber. Slice the green onions.
- Once the bulgur is ready, fluff it with a fork and let it cool for a few minutes.
- In a large mixing bowl, combine the cooked bulgur with the chopped parsley, mint, tomatoes, cucumber, and green onions.
- In a separate small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour this dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
