Ingredients

  • Bulgar wheat - 1/2 cup
  • Water - 1 cup
  • Fresh parsley, finely chopped - 1 cup
  • Fresh mint leaves, finely chopped - 1/4 cup
  • Tomato, diced - 1 medium
  • Cucumber, diced - 1/2 medium
  • Green onion, finely chopped - 2 stalks
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a medium saucepan, bring 1 cup of water to a boil.
  2. Add the bulgur wheat to the boiling water, cover, and remove from heat. Let it sit for about 15 minutes or until the water is absorbed.
  3. Fluff the bulgur with a fork and allow it to cool to room temperature.
  4. In a large bowl, combine the chopped parsley, mint, tomato, cucumber, and green onion.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Add the cooled bulgur to the vegetable mixture and pour the dressing over it. Toss gently to combine all ingredients.
  7. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
