- Bulgar wheat - 1/2 cup

- Green onion, finely chopped - 2 stalks
- Olive oil - 2 tablespoons

Steps
- In a medium saucepan, bring 1 cup of water to a boil.
- Add the bulgur wheat to the boiling water, cover, and remove from heat. Let it sit for about 15 minutes or until the water is absorbed.
- Fluff the bulgur with a fork and allow it to cool to room temperature.
- In a large bowl, combine the chopped parsley, mint, tomato, cucumber, and green onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Add the cooled bulgur to the vegetable mixture and pour the dressing over it. Toss gently to combine all ingredients.
