- Shrimp (peeled and deveined) - 250 grams
- Bell pepper (red, sliced) - 1 medium
- Zucchini (sliced) - 1 medium
- Carrot (julienned) - 1 medium
- Green onion (chopped) - 2 stalks
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Szechuan peppercorns - 1 teaspoon
- Soy sauce (low-sodium) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Cornstarch - 1 teaspoon
- Sugar - 1 teaspoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine the soy sauce, rice vinegar, cornstarch, sugar, and a pinch of salt and black pepper. Mix well and set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the Szechuan peppercorns and sauté for about 30 seconds until fragrant.
- Add the minced garlic and grated ginger to the skillet and stir-fry for another 30 seconds.
- Increase the heat to high and add the shrimp to the skillet. Stir-fry for about 3-4 minutes, or until the shrimp turn pink and opaque.
- Add the sliced bell pepper, zucchini, and julienned carrot. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
- Pour the prepared sauce over the shrimp and vegetables. Toss everything together to coat evenly and cook for an additional 2 minutes until the sauce thickens slightly.
- Remove from heat and garnish with chopped green onions before serving.
