Ingredients

  • Shrimp (peeled and deveined) - 250 grams
  • Bell pepper (red, sliced) - 1 medium
  • Zucchini (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Green onion (chopped) - 2 stalks
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Szechuan peppercorns - 1 teaspoon
  • Soy sauce (low-sodium) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the soy sauce, rice vinegar, cornstarch, sugar, and a pinch of salt and black pepper. Mix well and set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the Szechuan peppercorns and sauté for about 30 seconds until fragrant.
  3. Add the minced garlic and grated ginger to the skillet and stir-fry for another 30 seconds.
  4. Increase the heat to high and add the shrimp to the skillet. Stir-fry for about 3-4 minutes, or until the shrimp turn pink and opaque.
  5. Add the sliced bell pepper, zucchini, and julienned carrot. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
  6. Pour the prepared sauce over the shrimp and vegetables. Toss everything together to coat evenly and cook for an additional 2 minutes until the sauce thickens slightly.
  7. Remove from heat and garnish with chopped green onions before serving.
