Ingredients

  • Cooked jasmine rice - 2 cups
  • Halal chicken breast, diced - 150 grams
  • Red bell pepper, diced - 1 medium
  • Green bell pepper, diced - 1 medium
  • Carrot, diced - 1 medium
  • Green onions, chopped - 3 stalks
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Szechuan peppercorns - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Chili sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced Halal chicken breast and sauté until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic, ginger, and Szechuan peppercorns. Sauté for 1-2 minutes until fragrant.
  4. Add diced red and green bell peppers, carrot, and half of the chopped green onions. Cook for 3-4 minutes until vegetables are tender.
  5. Stir in the cooked jasmine rice, breaking up any clumps. Mix well with the vegetables.
  6. Add soy sauce, chili sauce, sesame oil, salt, and black pepper, stirring to combine thoroughly.
  7. Return the cooked chicken to the skillet and mix well. Cook for an additional 2-3 minutes to heat through.
  8. Garnish with the remaining chopped green onions before serving.
