- Cooked jasmine rice - 2 cups
- Halal chicken breast, diced - 150 grams
- Red bell pepper, diced - 1 medium
- Green bell pepper, diced - 1 medium
- Carrot, diced - 1 medium
- Green onions, chopped - 3 stalks
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Szechuan peppercorns - 1 teaspoon
- Soy sauce - 2 tablespoons
- Chili sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add diced Halal chicken breast and sauté until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add minced garlic, ginger, and Szechuan peppercorns. Sauté for 1-2 minutes until fragrant.
- Add diced red and green bell peppers, carrot, and half of the chopped green onions. Cook for 3-4 minutes until vegetables are tender.
- Stir in the cooked jasmine rice, breaking up any clumps. Mix well with the vegetables.
- Add soy sauce, chili sauce, sesame oil, salt, and black pepper, stirring to combine thoroughly.
- Return the cooked chicken to the skillet and mix well. Cook for an additional 2-3 minutes to heat through.
- Garnish with the remaining chopped green onions before serving.
