Ingredients

  • beef sirloin - 300 grams, thinly sliced
  • cornstarch - 2 tablespoons
  • soy sauce - 2 tablespoons
  • Szechuan peppercorns - 1 teaspoon
  • garlic - 3 cloves, minced
  • ginger - 1 tablespoon, minced
  • green bell pepper - 1 medium, sliced
  • red bell pepper - 1 medium, sliced
  • carrot - 1 medium, julienned
  • scallions - 2, chopped
  • vegetable oil - 2 tablespoons
  • chili paste - 1 tablespoon
  • sesame oil - 1 teaspoon
  • rice vinegar - 1 tablespoon
  • water - 100 ml
  • salt - to taste

Steps

  1. In a bowl, combine the sliced beef with soy sauce and cornstarch. Let it marinate for 10 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add Szechuan peppercorns and sauté until fragrant, about 1 minute.
  3. Add the marinated beef to the skillet and stir-fry for about 2-3 minutes until browned. Remove the beef and set aside.
  4. In the same skillet, add garlic, ginger, and sliced vegetables (green bell pepper, red bell pepper, and carrot). Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the beef to the skillet and add chili paste, sesame oil, rice vinegar, and water. Stir well to combine and cook for another 2-3 minutes until heated through.
  6. Adjust seasoning with salt to taste and garnish with chopped scallions before serving.
