- beef sirloin - 300 grams, thinly sliced
- cornstarch - 2 tablespoons
- soy sauce - 2 tablespoons
- Szechuan peppercorns - 1 teaspoon
- garlic - 3 cloves, minced
- ginger - 1 tablespoon, minced
- green bell pepper - 1 medium, sliced
- red bell pepper - 1 medium, sliced
- carrot - 1 medium, julienned
- scallions - 2, chopped
- vegetable oil - 2 tablespoons
- chili paste - 1 tablespoon
- sesame oil - 1 teaspoon
- rice vinegar - 1 tablespoon
- water - 100 ml
- salt - to taste
Steps
- In a bowl, combine the sliced beef with soy sauce and cornstarch. Let it marinate for 10 minutes.
- Heat vegetable oil in a large skillet over medium-high heat. Add Szechuan peppercorns and sauté until fragrant, about 1 minute.
- Add the marinated beef to the skillet and stir-fry for about 2-3 minutes until browned. Remove the beef and set aside.
- In the same skillet, add garlic, ginger, and sliced vegetables (green bell pepper, red bell pepper, and carrot). Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the beef to the skillet and add chili paste, sesame oil, rice vinegar, and water. Stir well to combine and cook for another 2-3 minutes until heated through.
- Adjust seasoning with salt to taste and garnish with chopped scallions before serving.
