Ingredients

  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Avocado - 1 medium, sliced
  • Red cabbage - 1 cup, shredded
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes into small cubes.
  3. In a mixing bowl, toss the sweet potato cubes with olive oil, ground cumin, chili powder, salt, and black pepper until well coated.
  4. Spread the seasoned sweet potatoes evenly on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
  5. While the sweet potatoes are roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  6. Once the sweet potatoes are done, assemble the tacos by placing a generous scoop of roasted sweet potatoes on each tortilla.
  7. Top each taco with sliced avocado, shredded red cabbage, and chopped cilantro.
