- Corn tortillas - 4 small
- Avocado - 1 medium, sliced
- Red cabbage - 1 cup, shredded
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
Steps
- Preheat the oven to 200°C (400°F).
- Peel and dice the sweet potatoes into small cubes.
- In a mixing bowl, toss the sweet potato cubes with olive oil, ground cumin, chili powder, salt, and black pepper until well coated.
- Spread the seasoned sweet potatoes evenly on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
