Ingredients

  • Sweet potatoes - 400 grams
  • Carrot - 1 medium (about 70 grams)
  • Onion - 1 small (about 100 grams)
  • Garlic - 2 cloves
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish (optional)

Steps

  1. Peel and chop the sweet potatoes and carrot into small cubes.
  2. Finely chop the onion and garlic.
  3. In a medium pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  4. Add the sweet potatoes and carrot to the pot, stirring to combine. Cook for another 5 minutes.
  5. Stir in the ground cumin and ginger, cooking for an additional minute until fragrant.
  6. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the sweet potatoes and carrot are tender.
  7. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, you can reserve some of the vegetables before blending.
  8. Stir in the coconut milk and season with salt and black pepper to taste. Heat for an additional 2-3 minutes.
  9. Serve hot, garnished with fresh cilantro if desired.
