- Sweet potatoes - 400 grams
- Carrot - 1 medium (about 70 grams)
- Onion - 1 small (about 100 grams)
- Garlic - 2 cloves
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish (optional)
Steps
- Peel and chop the sweet potatoes and carrot into small cubes.
- Finely chop the onion and garlic.
- In a medium pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the sweet potatoes and carrot to the pot, stirring to combine. Cook for another 5 minutes.
- Stir in the ground cumin and ginger, cooking for an additional minute until fragrant.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the sweet potatoes and carrot are tender.
- Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, you can reserve some of the vegetables before blending.
- Stir in the coconut milk and season with salt and black pepper to taste. Heat for an additional 2-3 minutes.
- Serve hot, garnished with fresh cilantro if desired.
