Ingredients

  • Sweet potatoes - 2 medium (about 400g)

  • Salt - 1/2 teaspoon (2.5g)
  • Black pepper - 1/4 teaspoon (1.25g)
  • Avocado - 1 medium (about 150g)
  • Lime juice - 1 tablespoon (15ml)
  • Feta cheese - 50g, crumbled
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the sweet potatoes thoroughly and slice them into 1 cm thick rounds.
  3. In a bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
  4. Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 20 minutes, flipping halfway through, until they are tender and slightly crispy.
  6. While the sweet potatoes are baking, prepare the avocado spread by mashing the avocado in a bowl and mixing in lime juice and a pinch of salt.
  7. Once the sweet potato rounds are done, remove them from the oven and let them cool slightly.
  8. Top each sweet potato round with a dollop of avocado spread, a sprinkle of crumbled feta cheese, and a little chopped cilantro.
  9. Serve warm and enjoy!
