- Avocado - 1 medium (about 150g)
- Lime juice - 1 tablespoon (15ml)
- Feta cheese - 50g, crumbled
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Wash the sweet potatoes thoroughly and slice them into 1 cm thick rounds.
- In a bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes, flipping halfway through, until they are tender and slightly crispy.
- While the sweet potatoes are baking, prepare the avocado spread by mashing the avocado in a bowl and mixing in lime juice and a pinch of salt.
- Once the sweet potato rounds are done, remove them from the oven and let them cool slightly.
