- Coconut oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, bring water to a boil and add the diced sweet potatoes. Cook for 10-12 minutes until tender, then drain and set aside.
- In a skillet, heat the coconut oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the cauliflower rice to the skillet, stirring to combine. Season with salt and black pepper, cooking for an additional 5-7 minutes until the cauliflower is tender.
