  • Cauliflower rice - 200 grams
  • Coconut oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, bring water to a boil and add the diced sweet potatoes. Cook for 10-12 minutes until tender, then drain and set aside.
  2. In a skillet, heat the coconut oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Add the cauliflower rice to the skillet, stirring to combine. Season with salt and black pepper, cooking for an additional 5-7 minutes until the cauliflower is tender.
  4. Mash the cooked sweet potatoes with a fork or potato masher until smooth. Stir the mashed sweet potatoes into the cauliflower rice mixture until well combined.
