Ingredients

  • 200g sweet potato - peeled and cubed
  • 50g quinoa - rinsed
  • 100ml water
  • 1 small onion - finely chopped
  • 1 garlic clove - minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 50g breadcrumbs - gluten-free if desired
  • Salt - to taste
  • Pepper - to taste
  • 1 tablespoon olive oil - for cooking
  • 2 whole grain burger buns
  • 1 small avocado - sliced
  • Lime juice - from 1/2 lime
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Place the cubed sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until tender.
  3. While the sweet potatoes are roasting, cook the quinoa. In a small saucepan, bring 100ml of water to a boil. Add the rinsed quinoa, cover, and reduce heat to low. Simmer for 15 minutes or until the water is absorbed. Fluff with a fork and set aside.
  4. In a skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened, about 3-4 minutes.
  5. In a large bowl, combine the roasted sweet potatoes, cooked quinoa, sautéed onion and garlic, ground cumin, smoked paprika, breadcrumbs, salt, and pepper. Mash the mixture with a fork until well combined but still chunky.
  6. Form the mixture into two burger patties.
  7. In the same skillet, add a little more olive oil if needed and cook the patties for about 4-5 minutes on each side, or until golden brown.
  8. To assemble, place each patty on a whole grain bun, top with sliced avocado, drizzle with lime juice, and garnish with fresh cilantro.
