Ingredients

  • Sweet potatoes - 300 grams (about 2 medium sweet potatoes)
  • Coconut milk - 200 ml
  • Maple syrup - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Chopped pecans - 2 tablespoons (for topping)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel and dice the sweet potatoes into small cubes.
  3. Boil the sweet potatoes in a pot of water for about 15 minutes, or until tender. Drain and let cool slightly.
  4. In a mixing bowl, combine the cooked sweet potatoes, coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Mash until smooth and well combined.
  5. Add the egg to the sweet potato mixture and mix until fully incorporated.
  6. Pour the sweet potato mixture into a greased baking dish or ramekins.
