- Whole wheat pizza dough - 250 grams
- Sweet potato - 200 grams, peeled and diced
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Spinach - 50 grams, fresh
- Cherry tomatoes - 100 grams, halved
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a pot of salted boiling water, cook the diced sweet potatoes for about 10 minutes until tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute. Add the cooked sweet potatoes and spinach, cooking until the spinach wilts. Season with salt, black pepper, and dried oregano. Remove from heat.
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet lined with parchment paper.
- Spread the sweet potato and spinach mixture evenly over the pizza dough. Top with halved cherry tomatoes and sprinkle nutritional yeast over the top.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
- Remove from oven and allow to cool slightly. Garnish with fresh basil leaves before slicing and serving.
