- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Fresh basil - a handful, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and dice the sweet potato into 1-inch cubes. Toss them in 1 tablespoon of olive oil, salt, and pepper, and spread them on a baking sheet.
- Roast the sweet potatoes in the preheated oven for about 20 minutes, or until they are fork-tender and slightly caramelized.
- While the sweet potatoes are roasting, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Add the roasted sweet potatoes and cooked pasta to the skillet. Toss everything together and season with salt, pepper, and red pepper flakes if using.
- Remove from heat, sprinkle with grated Parmesan cheese, and toss to combine.
- Serve hot, garnished with fresh basil.
