Ingredients

  • Whole wheat pasta - 200 grams
  • Sweet potato - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Fresh basil - a handful, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potato into 1-inch cubes. Toss them in 1 tablespoon of olive oil, salt, and pepper, and spread them on a baking sheet.
  3. Roast the sweet potatoes in the preheated oven for about 20 minutes, or until they are fork-tender and slightly caramelized.
  4. While the sweet potatoes are roasting, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  5. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  6. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  7. Add the roasted sweet potatoes and cooked pasta to the skillet. Toss everything together and season with salt, pepper, and red pepper flakes if using.
  8. Remove from heat, sprinkle with grated Parmesan cheese, and toss to combine.
  9. Serve hot, garnished with fresh basil.
