- Sweet potatoes - 400 grams
- All-purpose flour - 30 grams
- Egg - 1 large
- Onion - 1 small, grated
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- Peel and grate the sweet potatoes using a box grater or food processor.
- Place the grated sweet potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the grated sweet potatoes, flour, egg, grated onion, minced garlic, salt, black pepper, and cinnamon. Mix until well combined.
- Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom of the pan.
- Once the oil is hot, scoop about 2 tablespoons of the sweet potato mixture and flatten it slightly to form a patty. Repeat with the remaining mixture.
- Fry the latkes for about 4-5 minutes on each side, or until golden brown and crispy. Add more oil as needed.
- Remove the latkes from the skillet and drain on paper towels to remove excess oil.
- Serve warm, optionally with sour cream or applesauce.
