Ingredients

  • Sweet potatoes - 400 grams
  • All-purpose flour - 30 grams
  • Egg - 1 large
  • Onion - 1 small, grated
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. Peel and grate the sweet potatoes using a box grater or food processor.
  2. Place the grated sweet potatoes in a clean kitchen towel and squeeze out excess moisture.
  3. In a mixing bowl, combine the grated sweet potatoes, flour, egg, grated onion, minced garlic, salt, black pepper, and cinnamon. Mix until well combined.
  4. Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom of the pan.
  5. Once the oil is hot, scoop about 2 tablespoons of the sweet potato mixture and flatten it slightly to form a patty. Repeat with the remaining mixture.
  6. Fry the latkes for about 4-5 minutes on each side, or until golden brown and crispy. Add more oil as needed.
  7. Remove the latkes from the skillet and drain on paper towels to remove excess oil.
  8. Serve warm, optionally with sour cream or applesauce.
