- Sweet potatoes - 400 grams
- Eggs - 2 large
- Brown sugar - 50 grams
- Cinnamon - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Butter - 30 grams, melted
- Salt - 1/2 teaspoon
- Flour - 30 grams
- Chopped walnuts - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- Peel and chop the sweet potatoes into small cubes, then boil them in salted water for about 15 minutes until soft.
- Drain the sweet potatoes and mash them in a large bowl until smooth.
- Add the eggs, brown sugar, cinnamon, vanilla extract, melted butter, and salt to the mashed sweet potatoes and mix until well combined.
- Stir in the flour until the mixture is smooth and evenly mixed.
- Pour the mixture into a greased baking dish (approximately 20cm x 20cm).
- Sprinkle the chopped walnuts evenly on top of the kugel mixture.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool for a few minutes before serving.
