- Cornmeal - 1/2 cup (60 grams)
- Baking powder - 1 teaspoon
- Ground cumin - 1/2 teaspoon
- Smoked paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/4 teaspoon
- Onion - 1/4 medium, finely chopped
- Green onion - 2, finely chopped
- Plant-based milk - 1/3 cup (80 ml)
- Vegetable oil - for frying
Steps
- Peel and dice the sweet potato, then boil in a pot of water for about 10-15 minutes, or until tender. Drain and mash until smooth.
- In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, cumin, smoked paprika, salt, black pepper, and garlic powder. Mix well.
- Add the mashed sweet potato to the dry ingredients, followed by the finely chopped onion, green onion, and plant-based milk. Stir until just combined; the mixture should be thick but spoonable.
- Heat vegetable oil in a deep frying pan over medium heat until hot (about 180°C or 350°F).
- Using a spoon, drop small balls of the hush puppy mixture into the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes on each side, or until golden brown.
- Remove the hush puppies with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce.
