Ingredients

  • Sweet potato - 200 grams
  • Canned chickpeas - 120 grams, drained and rinsed
  • Tahini - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and peel the sweet potato, then cut it into cubes.
  3. Spread the sweet potato cubes on a baking sheet and roast in the oven for 20-25 minutes until tender.
  4. Remove the roasted sweet potatoes from the oven and let them cool slightly.
  5. In a food processor, combine the roasted sweet potatoes, chickpeas, tahini, olive oil, minced garlic, lemon juice, cumin, salt, and black pepper.
  6. Blend until smooth, adding water as needed to achieve desired consistency.
  7. Taste and adjust seasoning if necessary.
  8. Transfer the hummus to a serving bowl and drizzle with additional olive oil if desired. Serve with fresh vegetables or whole-grain crackers.
