  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Peel and dice the sweet potatoes into small cubes.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally, until they start to soften.
