  • Black beans - 1 cup (cooked and drained)
  • Corn - 1/2 cup (frozen or canned)
  • Red bell pepper - 1 medium, diced
  • Red onion - 1/2 medium, diced
  • Garlic - 2 cloves, minced
  • Tortillas - 2 large (10-inch)
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes into small cubes, then toss them in a bowl with olive oil, cumin, chili powder, and salt.
  3. Spread the sweet potatoes on a baking sheet and roast in the oven for 25-30 minutes, or until tender and slightly caramelized.
  4. While the sweet potatoes are roasting, heat a non-stick skillet over medium heat and add a splash of olive oil.
  5. Add the diced red onion and bell pepper to the skillet, and sauté for about 5 minutes until they soften.
