- Sweet potato - 200 grams
- Black beans - 100 grams (canned, drained and rinsed)
- Breadcrumbs - 50 grams
- Red onion - 1/4 medium, finely chopped
- Garlic - 1 clove, minced
- Cumin - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Burger buns - 2
- Avocado - 1/2, sliced
- Lettuce leaves - 2
- Tomato - 1, sliced
Steps
- Preheat your oven to 200°C (400°F).
- Peel and chop the sweet potato into small cubes, then boil in salted water for about 10-15 minutes or until tender.
- Drain the sweet potatoes and mash them in a bowl.
- In the same bowl, add black beans, breadcrumbs, red onion, garlic, cumin, paprika, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
- While the patties are cooking, toast the burger buns in the oven for a few minutes.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the sweet potato patty, sliced avocado, and tomato. Top with the other half of the bun.
