- Sweet potatoes - 400 grams

- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- BBQ sauce - 100 grams
- Whole wheat burger buns - 2
- Coleslaw mix - 100 grams
- Vegan mayonnaise - 2 tablespoons
- Apple cider vinegar - 1 tablespoon
- Fresh cilantro - for garnish (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Peel and cube the sweet potatoes into bite-sized pieces.
- In a large bowl, toss the sweet potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper until well coated.
- Spread the seasoned sweet potatoes evenly on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized, tossing halfway through.
- While the sweet potatoes are roasting, prepare the coleslaw by mixing the coleslaw mix, vegan mayonnaise, and apple cider vinegar in a bowl. Set aside.
- Once the sweet potatoes are done, remove them from the oven and mix with the BBQ sauce until well coated.
- To assemble the sandwiches, place a generous portion of the BBQ sweet potato mixture on the bottom half of each burger bun.
- Top with coleslaw and garnish with fresh cilantro if desired, then place the top half of the bun on each sandwich.
