Ingredients

  • Sweet potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • BBQ sauce - 100 grams
  • Whole wheat burger buns - 2
  • Coleslaw mix - 100 grams
  • Vegan mayonnaise - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Fresh cilantro - for garnish (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. In a large bowl, toss the sweet potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper until well coated.
  4. Spread the seasoned sweet potatoes evenly on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized, tossing halfway through.
  5. While the sweet potatoes are roasting, prepare the coleslaw by mixing the coleslaw mix, vegan mayonnaise, and apple cider vinegar in a bowl. Set aside.
  6. Once the sweet potatoes are done, remove them from the oven and mix with the BBQ sauce until well coated.
  7. To assemble the sandwiches, place a generous portion of the BBQ sweet potato mixture on the bottom half of each burger bun.
  8. Top with coleslaw and garnish with fresh cilantro if desired, then place the top half of the bun on each sandwich.
