  • Cooked black beans - 1 cup (240g), drained and rinsed
  • BBQ sauce - 1/4 cup (60ml), dairy-free
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes into 1-inch pieces and place them in a bowl.
  3. Drizzle 1 tablespoon of olive oil over the sweet potatoes, sprinkle with salt, and toss to coat evenly.
  4. Spread the sweet potatoes in a single layer on a baking sheet and roast in the oven for 20 minutes, stirring halfway through, until tender and slightly caramelized.
  5. While the sweet potatoes are roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
