  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Pumpkin seeds - 30 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potato into 1-inch cubes.
  3. Toss the sweet potato cubes with 1 tablespoon of olive oil, salt, and black pepper on a baking sheet.
