  • Sweet potato - 1 medium (about 200g)
  • Black beans - 1 cup (cooked, drained)
  • Corn tortillas - 4 small
  • Red onion - 1/2 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Vegetable broth - 1/2 cup
  • Tomato sauce - 1/2 cup
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste
  • Avocado - for serving (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel and dice the sweet potato into small cubes. Boil in salted water for about 10-15 minutes until tender, then drain.
  3. In a skillet, heat the olive oil over medium heat. Add the diced red onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic, cumin, and chili powder to the skillet. Stir and cook for another minute until fragrant.
  5. Mash the cooked sweet potato and add it to the skillet along with the black beans, lime juice, salt, and pepper. Mix well and remove from heat.
  6. Warm the corn tortillas in a dry skillet or microwave until pliable.
  7. Spoon the sweet potato and black bean mixture into the center of each tortilla, roll tightly, and place seam side down in a baking dish.
  8. In a bowl, mix the vegetable broth and tomato sauce. Pour the sauce evenly over the enchiladas.
  9. Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until heated through.
  10. Garnish with fresh cilantro and serve with avocado slices if desired.
