- Corn tortillas - 4 small
- Red onion - 1/2 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Vegetable broth - 1/2 cup
- Tomato sauce - 1/2 cup
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste

Steps
- Preheat the oven to 180°C (350°F).
- Peel and dice the sweet potato into small cubes. Boil in salted water for about 10-15 minutes until tender, then drain.
- In a skillet, heat the olive oil over medium heat. Add the diced red onion and cook until translucent, about 5 minutes.
- Add the minced garlic, cumin, and chili powder to the skillet. Stir and cook for another minute until fragrant.
- Mash the cooked sweet potato and add it to the skillet along with the black beans, lime juice, salt, and pepper. Mix well and remove from heat.
- Warm the corn tortillas in a dry skillet or microwave until pliable.
- Spoon the sweet potato and black bean mixture into the center of each tortilla, roll tightly, and place seam side down in a baking dish.
- In a bowl, mix the vegetable broth and tomato sauce. Pour the sauce evenly over the enchiladas.
- Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until heated through.
- Garnish with fresh cilantro and serve with avocado slices if desired.
