Ingredients
- All-purpose flour - 1 cup (125g)
- Eggs - 2 large
- Milk - 1 cup (240ml)
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Cottage cheese - 1 cup (240g)
- Cream cheese - 1/2 cup (120g)
- Sugar - 1/4 cup (50g)
- Lemon zest - 1 teaspoon
- Butter - for frying
- Powdered sugar - for serving
- Fresh berries - for serving (optional)
Steps
- In a mixing bowl, whisk together the flour, eggs, milk, vanilla extract, and salt until smooth to create the batter for the blintzes.
- Heat a non-stick skillet over medium heat and add a small amount of butter to coat the pan.
- Pour a ladleful of batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for an additional minute. Remove and set aside. Repeat until all batter is used.
- In a separate bowl, combine the cottage cheese, cream cheese, sugar, and lemon zest, mixing until smooth and creamy to create the filling.
- Take one blintz, place a generous spoonful of the cheese mixture in the center, fold the sides over, and then roll it up tightly.
- In the same skillet, add a bit more butter and place the filled blintzes seam-side down. Cook for about 2-3 minutes on each side, until golden brown and crispy.
- Serve warm, dusted with powdered sugar and topped with fresh berries if desired.
