Ingredients
- Ground beef - 250 grams
- Breadcrumbs - 30 grams
- Egg - 1 large
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Ketchup - 60 grams
- Soy sauce - 30 grams (low sodium)
- Brown sugar - 30 grams
- Rice vinegar - 15 ml
- Pineapple chunks - 100 grams (canned, drained)
- Cornstarch - 1 teaspoon (optional, for thickening)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine ground beef, breadcrumbs, egg, chopped onion, minced garlic, salt, and black pepper. Mix until well combined.
- Shape the mixture into small meatballs, about 2.5 cm in diameter.
- Place the meatballs on a baking sheet lined with parchment paper and bake for 15-20 minutes or until browned and cooked through.
- While the meatballs are baking, prepare the sweet and sour sauce by combining ketchup, soy sauce, brown sugar, rice vinegar, and pineapple chunks in a saucepan over medium heat.
- Bring the sauce to a simmer, stirring occasionally, for about 5 minutes. If you prefer a thicker sauce, mix cornstarch with a tablespoon of water and add it to the sauce, stirring until thickened.
- Once the meatballs are done, remove them from the oven and add them to the saucepan with the sweet and sour sauce. Stir gently to coat the meatballs in the sauce.
- Serve warm, garnished with additional pineapple chunks if desired.
