Ingredients

  • Orzo pasta - 150 grams
  • Sundried tomatoes - 100 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Basil - 2 tablespoons, fresh, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, bring the vegetable broth to a boil.
  2. Add the orzo pasta to the boiling broth and cook according to package instructions, usually about 8-10 minutes, until al dente.
  3. While the orzo cooks, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  5. Stir in the chopped sundried tomatoes and cook for another 2-3 minutes.
  6. Once the orzo is cooked, drain any excess broth and add the orzo to the skillet with the sundried tomatoes and garlic.
  7. Mix in the fresh spinach and cook until wilted, about 2 minutes.
  8. Add the grated Parmesan cheese, fresh basil, and season with salt and black pepper to taste.
