Ingredients

  • Sunchokes - 500 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Unsweetened almond milk - 1/4 cup
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Wash and scrub the sunchokes thoroughly to remove any dirt, then peel them using a vegetable peeler.
  2. Cut the sunchokes into uniform pieces and place them in a pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until tender.
  3. In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  4. Once the sunchokes are tender, drain them and transfer to a mixing bowl. Add the sautéed garlic, almond milk, fresh thyme, salt, and black pepper.
  5. Mash the sunchokes using a potato masher or fork until smooth and creamy. Adjust the consistency with additional almond milk if desired.
