- Sunchokes - 500 grams
- Garlic - 2 cloves, minced

- Unsweetened almond milk - 1/4 cup
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Wash and scrub the sunchokes thoroughly to remove any dirt, then peel them using a vegetable peeler.
- Cut the sunchokes into uniform pieces and place them in a pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until tender.
- In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Once the sunchokes are tender, drain them and transfer to a mixing bowl. Add the sautéed garlic, almond milk, fresh thyme, salt, and black pepper.
