Ingredients

  • Sunchokes - 300 grams, peeled and chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Vegetable broth - 500 milliliters
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  2. Add the chopped sunchokes to the pot and stir for another 3 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat, cover, and let it simmer for 15-20 minutes, or until the sunchokes are tender.
