- Onion - 1 medium, chopped
- Vegetable broth - 500 milliliters
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Add the chopped sunchokes to the pot and stir for another 3 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat, cover, and let it simmer for 15-20 minutes, or until the sunchokes are tender.
