Ingredients

  • all-purpose flour - 125 grams
  • granulated sugar - 30 grams
  • instant yeast - 5 grams
  • salt - 1 gram
  • milk (dairy or non-dairy) - 75 ml
  • egg - 1 large
  • unsalted butter (melted) - 15 grams
  • jam (strawberry or raspberry) - 40 grams
  • powdered sugar - for dusting
  • vegetable oil - for frying

Steps

  1. In a mixing bowl, combine flour, sugar, instant yeast, and salt. Stir to combine.
  2. In another bowl, whisk together milk, egg, and melted butter until well mixed.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes until smooth.
  5. Cover the dough with a clean kitchen towel and let it rise in a warm place for 1 hour or until doubled in size.
  6. After the dough has risen, punch it down and roll it out to about 1 cm thickness.
  7. Using a small round cutter, cut out circles of dough. Place a small teaspoon of jam in the center of half of the circles and top with the remaining circles, sealing the edges well.
  8. Heat vegetable oil in a deep pan over medium heat until it reaches 180°C (350°F).
  9. Carefully drop the filled dough balls into the hot oil, frying in batches for about 2-3 minutes per side until golden brown.
  10. Remove the sufganiyot bites from the oil and place them on a paper towel-lined plate to drain excess oil.
  11. Dust with powdered sugar before serving.
