Sufganiyot Bites

Ingredients
- all-purpose flour - 125 grams
- granulated sugar - 30 grams
- instant yeast - 5 grams
- salt - 1 gram
- milk (dairy or non-dairy) - 75 ml
- egg - 1 large
- unsalted butter (melted) - 15 grams
- jam (strawberry or raspberry) - 40 grams
- powdered sugar - for dusting
- vegetable oil - for frying
Steps
- In a mixing bowl, combine flour, sugar, instant yeast, and salt. Stir to combine.
- In another bowl, whisk together milk, egg, and melted butter until well mixed.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth.
- Cover the dough with a clean kitchen towel and let it rise in a warm place for 1 hour or until doubled in size.
- After the dough has risen, punch it down and roll it out to about 1 cm thickness.
- Using a small round cutter, cut out circles of dough. Place a small teaspoon of jam in the center of half of the circles and top with the remaining circles, sealing the edges well.
- Heat vegetable oil in a deep pan over medium heat until it reaches 180°C (350°F).
- Carefully drop the filled dough balls into the hot oil, frying in batches for about 2-3 minutes per side until golden brown.
- Remove the sufganiyot bites from the oil and place them on a paper towel-lined plate to drain excess oil.
- Dust with powdered sugar before serving.
