  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/4 cup shredded mozzarella cheese

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Cut the zucchini in half lengthwise and scoop out the insides using a spoon, creating a boat shape. Set the zucchini shells aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.
  4. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  5. Stir in the diced bell pepper, oregano, paprika, salt, and pepper. Cook for an additional 3 minutes until the bell pepper softens.
  6. Mix in the diced tomatoes and cook for another 2 minutes, allowing the mixture to heat through.
  7. Spoon the turkey mixture into the zucchini boats, pressing it down slightly to pack it in. Place the stuffed zucchini on a baking dish.
  8. Sprinkle the shredded mozzarella cheese evenly over the tops of the stuffed zucchini.
