Ingredients

  • Zucchini - 2 medium-sized
  • Quinoa - 1/2 cup (90g)
  • Cooked chickpeas - 1/2 cup (120g)
  • Cooked lentils - 1/2 cup (120g)
  • Fresh spinach - 1 cup (30g), chopped
  • Carrot - 1 medium-sized, grated
  • Frozen peas - 1/2 cup (75g)
  • Olive oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 1 cup (240ml)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the centers using a spoon to create boats. Set aside the scooped flesh.
  3. In a medium saucepan, heat olive oil over medium heat. Add diced onion and minced garlic, sauté for about 3-4 minutes until translucent.
  4. Stir in the grated carrot, chopped spinach, and reserved zucchini flesh. Cook for another 3-5 minutes until the spinach wilts.
  5. Add cooked quinoa, chickpeas, lentils, frozen peas, cumin, paprika, salt, and black pepper to the mixture. Stir well and cook for an additional 2 minutes.
  6. Spoon the filling into each zucchini boat evenly.
  7. Place the stuffed zucchinis in a baking dish and pour vegetable broth around them.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes until zucchinis are tender.
  9. Remove from the oven, let cool slightly, and serve warm.
