- 2 medium zucchinis

- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
Steps
- Preheat the oven to 190°C (375°F).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow shell.
- In a skillet, heat the olive oil over medium heat and sauté the red onion and garlic until translucent.
- Add the chickpeas, cooked quinoa, diced tomatoes, cumin, smoked paprika, salt, and pepper to the skillet, stirring well to combine.
- Cook the mixture for about 5-7 minutes until heated through.
- Remove the skillet from heat and stir in the chopped parsley.
- Spoon the chickpea mixture into the hollowed zucchini halves, packing it well.
- Place the stuffed zucchinis on a baking sheet and bake in the preheated oven for 15-20 minutes, until the zucchinis are tender.
