Ingredients

  • 2 medium zucchinis
  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup cooked quinoa
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow shell.
  3. In a skillet, heat the olive oil over medium heat and sauté the red onion and garlic until translucent.
  4. Add the chickpeas, cooked quinoa, diced tomatoes, cumin, smoked paprika, salt, and pepper to the skillet, stirring well to combine.
  5. Cook the mixture for about 5-7 minutes until heated through.
  6. Remove the skillet from heat and stir in the chopped parsley.
  7. Spoon the chickpea mixture into the hollowed zucchini halves, packing it well.
  8. Place the stuffed zucchinis on a baking sheet and bake in the preheated oven for 15-20 minutes, until the zucchinis are tender.
