Ingredients

  • 2 medium zucchini
  • 200 grams ground turkey
  • 1/2 cup cooked quinoa
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the zucchini in half lengthwise and scoop out the center using a spoon to create boats. Set aside the scooped flesh.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 3-4 minutes until softened.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Incorporate the ground turkey into the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  6. Mix in the cooked quinoa, scooped zucchini flesh, oregano, paprika, salt, and pepper. Stir until well combined and heated through.
  7. Fill each zucchini boat with the turkey-quinoa mixture, pressing down gently to pack it in.
  8. Top each filled zucchini with shredded mozzarella cheese.
  9. Place the stuffed zucchini boats on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  10. Remove from the oven, garnish with chopped parsley, and serve warm.
