- 1/4 cup diced onion
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley, chopped
Steps
- Preheat the oven to 190°C (375°F).
- Slice the zucchini in half lengthwise and scoop out the center using a spoon to create boats. Set aside the scooped flesh.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Incorporate the ground turkey into the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Mix in the cooked quinoa, scooped zucchini flesh, oregano, paprika, salt, and pepper. Stir until well combined and heated through.
- Fill each zucchini boat with the turkey-quinoa mixture, pressing down gently to pack it in.
- Top each filled zucchini with shredded mozzarella cheese.
- Place the stuffed zucchini boats on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
- Remove from the oven, garnish with chopped parsley, and serve warm.
