Ingredients

  • 2 medium zucchinis
  • 200 grams ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent, about 5 minutes.
  4. Add ground turkey to the skillet, cooking until browned and fully cooked, about 7-10 minutes.
  5. Stir in cherry tomatoes, oregano, basil, salt, and pepper. Cook for another 5 minutes until the tomatoes soften.
  6. Remove the skillet from heat and mix in half of the Parmesan cheese and chopped parsley.
  7. Fill each zucchini boat with the turkey mixture, pressing down slightly to pack it in.
  8. Place the stuffed zucchinis in a baking dish and sprinkle the remaining Parmesan cheese on top.
  9. Bake in the preheated oven for 25 minutes until the zucchinis are tender and the cheese is golden.
  10. Serve warm, garnished with additional parsley if desired.
