- 2 medium zucchinis
- 200 grams ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
Steps
- Preheat the oven to 190°C (375°F).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent, about 5 minutes.
- Add ground turkey to the skillet, cooking until browned and fully cooked, about 7-10 minutes.
- Stir in cherry tomatoes, oregano, basil, salt, and pepper. Cook for another 5 minutes until the tomatoes soften.
- Remove the skillet from heat and mix in half of the Parmesan cheese and chopped parsley.
- Fill each zucchini boat with the turkey mixture, pressing down slightly to pack it in.
- Place the stuffed zucchinis in a baking dish and sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for 25 minutes until the zucchinis are tender and the cheese is golden.
- Serve warm, garnished with additional parsley if desired.
