Ingredients

  • Large ripe tomatoes - 2
  • Quinoa - 1/2 cup (90g)
  • Vegetable broth - 1 cup (240ml)
  • Shredded mozzarella cheese - 1/2 cup (60g)
  • Grated Parmesan cheese - 2 tablespoons (30g)
  • Olive oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Fresh basil - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Rinse the quinoa under cold water and then combine it with the vegetable broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until the quinoa is cooked and the liquid is absorbed.
  3. While the quinoa is cooking, prepare the tomatoes. Cut the tops off the tomatoes and scoop out the insides with a spoon, reserving the flesh in a bowl. Place the hollowed tomatoes upside down on a paper towel to drain.
  4. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the reserved tomato flesh to the skillet and cook for 3-4 minutes until softened. Stir in the cooked quinoa, mozzarella cheese, Parmesan cheese, chopped basil, salt, and pepper. Mix well to combine.
  6. Stuff each hollowed tomato with the quinoa and cheese mixture, pressing down gently to pack it in.
  7. Place the stuffed tomatoes upright in a baking dish. Drizzle with a little olive oil and bake in the preheated oven for 15-20 minutes, until the tomatoes are tender and the tops are golden.
  8. Remove from the oven and let cool for a few minutes before serving.
