- Large ripe tomatoes - 2
- Quinoa - 1/2 cup (90g)
- Vegetable broth - 1 cup (240ml)
- Shredded mozzarella cheese - 1/2 cup (60g)
- Grated Parmesan cheese - 2 tablespoons (30g)
- Olive oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Fresh basil - 1 tablespoon, chopped
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Preheat the oven to 190°C (375°F).
- Rinse the quinoa under cold water and then combine it with the vegetable broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until the quinoa is cooked and the liquid is absorbed.
- While the quinoa is cooking, prepare the tomatoes. Cut the tops off the tomatoes and scoop out the insides with a spoon, reserving the flesh in a bowl. Place the hollowed tomatoes upside down on a paper towel to drain.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the reserved tomato flesh to the skillet and cook for 3-4 minutes until softened. Stir in the cooked quinoa, mozzarella cheese, Parmesan cheese, chopped basil, salt, and pepper. Mix well to combine.
- Stuff each hollowed tomato with the quinoa and cheese mixture, pressing down gently to pack it in.
- Place the stuffed tomatoes upright in a baking dish. Drizzle with a little olive oil and bake in the preheated oven for 15-20 minutes, until the tomatoes are tender and the tops are golden.
- Remove from the oven and let cool for a few minutes before serving.
