Ingredients

  • 2 medium sweet potatoes
  • 1 cup cooked quinoa
  • 1 can (400g) black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 1 avocado, diced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • 1/4 cup Greek yogurt (for topping, optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the sweet potatoes thoroughly and pierce them several times with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender.
  4. While the sweet potatoes are baking, prepare the filling: In a bowl, combine the cooked quinoa, black beans, corn, cumin, smoked paprika, salt, and pepper. Mix well.
  5. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  6. Cut each sweet potato in half lengthwise and scoop out a small portion of the flesh to create a cavity for the filling.
  7. Mix the scooped sweet potato flesh with the quinoa mixture, avocado, cilantro, and lime juice until well combined.
  8. Spoon the filling back into the sweet potato halves, packing it in gently.
  9. If desired, top with Greek yogurt before serving.
