- 2 medium sweet potatoes
- 1 cup cooked quinoa
- 1 can (400g) black beans, rinsed and drained
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 1 avocado, diced
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- 1/4 cup Greek yogurt (for topping, optional)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the sweet potatoes thoroughly and pierce them several times with a fork.
- Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender.
- While the sweet potatoes are baking, prepare the filling: In a bowl, combine the cooked quinoa, black beans, corn, cumin, smoked paprika, salt, and pepper. Mix well.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Cut each sweet potato in half lengthwise and scoop out a small portion of the flesh to create a cavity for the filling.
- Mix the scooped sweet potato flesh with the quinoa mixture, avocado, cilantro, and lime juice until well combined.
- Spoon the filling back into the sweet potato halves, packing it in gently.
- If desired, top with Greek yogurt before serving.
