Ingredients

  • Sole fillets - 2 (about 200g each)
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 small (about 75g)
  • Garlic, minced - 2 cloves
  • Carrot, grated - 1 medium (about 60g)
  • Celery, finely chopped - 1 stalk
  • Parsley, chopped - 2 tablespoons
  • Dill, chopped - 1 tablespoon
  • Matzo meal - 1/4 cup (30g)
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, sautéing until softened, about 5-7 minutes.
  3. Remove the skillet from heat and stir in the chopped parsley, dill, matzo meal, lemon juice, salt, black pepper, and paprika until combined.
  4. Lay the sole fillets on a clean surface and place an equal amount of the stuffing mixture in the center of each fillet. Fold the fillets over to encase the filling.
  5. Place the stuffed fillets seam-side down in a greased baking dish and drizzle with the remaining tablespoon of olive oil.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5-10 minutes, until the fish is cooked through and flakes easily with a fork.
  7. Serve hot, garnished with additional fresh herbs or lemon wedges if desired.
