- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 small (about 75g)
- Garlic, minced - 2 cloves
- Carrot, grated - 1 medium (about 60g)
- Celery, finely chopped - 1 stalk
- Parsley, chopped - 2 tablespoons
- Dill, chopped - 1 tablespoon
- Matzo meal - 1/4 cup (30g)
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, sautéing until softened, about 5-7 minutes.
- Remove the skillet from heat and stir in the chopped parsley, dill, matzo meal, lemon juice, salt, black pepper, and paprika until combined.
- Lay the sole fillets on a clean surface and place an equal amount of the stuffing mixture in the center of each fillet. Fold the fillets over to encase the filling.
- Place the stuffed fillets seam-side down in a greased baking dish and drizzle with the remaining tablespoon of olive oil.
- Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5-10 minutes, until the fish is cooked through and flakes easily with a fork.
- Serve hot, garnished with additional fresh herbs or lemon wedges if desired.
