Ingredients

  • Sole fillets - 2 (about 200g each)
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Shallot - 1 small, finely chopped
  • Breadcrumbs - 1/2 cup
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Vegetable broth - 1/4 cup

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat, add shallots and garlic, and sauté until soft.
  3. Stir in breadcrumbs, dill, parsley, salt, pepper, and paprika; cook for an additional 2 minutes.
  4. Remove from heat and mix in lemon juice and vegetable broth until well combined.
  5. Lay the sole fillets on a flat surface, season with salt and pepper, and place an equal amount of the stuffing mixture on one end of each fillet.
  6. Roll the fillets tightly around the stuffing, securing with a toothpick if necessary.
  7. Place the stuffed fillets in a baking dish, drizzle with the remaining olive oil, and cover with foil.
  8. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  9. Remove from the oven, let rest for 5 minutes, then serve warm.
