- Shallot - 1 small, finely chopped
- Breadcrumbs - 1/2 cup
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Vegetable broth - 1/4 cup
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat, add shallots and garlic, and sauté until soft.
- Stir in breadcrumbs, dill, parsley, salt, pepper, and paprika; cook for an additional 2 minutes.
- Remove from heat and mix in lemon juice and vegetable broth until well combined.
- Lay the sole fillets on a flat surface, season with salt and pepper, and place an equal amount of the stuffing mixture on one end of each fillet.
- Roll the fillets tightly around the stuffing, securing with a toothpick if necessary.
- Place the stuffed fillets in a baking dish, drizzle with the remaining olive oil, and cover with foil.
- Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven, let rest for 5 minutes, then serve warm.
