- 100 grams zucchini - diced
- 100 grams cauliflower rice
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 100 grams shredded mozzarella cheese
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley - chopped (for garnish)
Steps
- Preheat the oven to 190°C (375°F).
- Slice the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced zucchini and cauliflower rice, cooking for an additional 3-4 minutes until the vegetables are tender.
- Season the mixture with Italian seasoning, salt, and black pepper. Mix well and remove from heat.
- Stuff each bell pepper with the turkey mixture, packing it in tightly.
- Place the stuffed peppers upright in a baking dish and sprinkle the shredded mozzarella cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped parsley before serving.
