Ingredients

  • 2 large bell peppers (any color)
  • 250 grams ground beef (or turkey)
  • 100 grams cauliflower rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 50 grams shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 tablespoons tomato sauce

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until soft, about 3-5 minutes.
  4. Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
  5. Stir in cauliflower rice, Italian seasoning, smoked paprika, salt, and pepper. Cook for an additional 5 minutes, mixing thoroughly.
  6. Remove the skillet from heat and stir in tomato sauce and half of the mozzarella cheese.
  7. Stuff each bell pepper with the meat mixture, pressing down to pack it in.
  8. Place the stuffed peppers upright in a baking dish and top with the remaining mozzarella cheese.
  9. Cover the dish with foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  11. Let cool for a few minutes before serving.
