- 2 large bell peppers (any color)
- 250 grams ground beef (or turkey)
- 100 grams cauliflower rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 50 grams shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 tablespoons tomato sauce
Steps
- Preheat the oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until soft, about 3-5 minutes.
- Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
- Stir in cauliflower rice, Italian seasoning, smoked paprika, salt, and pepper. Cook for an additional 5 minutes, mixing thoroughly.
- Remove the skillet from heat and stir in tomato sauce and half of the mozzarella cheese.
- Stuff each bell pepper with the meat mixture, pressing down to pack it in.
- Place the stuffed peppers upright in a baking dish and top with the remaining mozzarella cheese.
- Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
