Ingredients

  • 2 large bell peppers (any color) - halved and seeded
  • 100 grams uncooked rice (white or brown)
  • 200 ml vegetable broth
  • 100 grams ground turkey or beef
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt - to taste
  • Pepper - to taste
  • 2 tablespoons fresh parsley - chopped
  • 50 grams shredded mozzarella cheese (optional)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a medium saucepan, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes, then add the minced garlic and cook for another minute.
  3. Add the ground turkey or beef to the pan and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the rice, vegetable broth, paprika, cumin, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  5. While the rice is cooking, prepare the bell peppers by halving them and removing the seeds. Place them in a baking dish, cut side up.
  6. Once the rice mixture is cooked, remove it from heat and stir in the chopped parsley. If using, fold in half of the shredded mozzarella cheese.
  7. Spoon the rice mixture generously into each bell pepper half, packing it in lightly.
  8. If desired, sprinkle the remaining mozzarella cheese on top of the stuffed peppers.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly.
  10. Remove from the oven and let cool for a few minutes before serving.
